Cupcake Bites

These are so cute and fun to make. They do take some time though!

First let me say I did not come up with this idea. I got it from another blogger, bakerella. I did tweak some things and added some of my own suggestions that helped me out when making these!

To make these you will need a candy mold. I got mine at Hobby Lobby for $1.99.

If this is your first time cake cupcake bite maker, you may want to start with a cake mix and ready-made frosting. This is what I did the first time as well. Once you have the skill down then, try with your favorite cake and frosting recipe. Here are the instructions:

Yummy Cupcake Bites

  • 1 box cake mix, any flavor you like (cook as directed)
  • 1 can cream cheese frosting (16 oz.)
  • 1 candy melts for cupcake bottom or 1 package chocolate bark
  • Colored Candy melts (again I got these at Hobby Lobby) for cupcake top
  • Candy Cup Mold
  • Sprinkles, m&ms , or drizzled chocolate for decoration
  1. After cake is cooked and cooled completely, crumble into large bowl.
  2. Mix cake thoroughly with 1 can cream cheese frosting. (use fingers to mix together, I promise it is easier)
  3. Roll mixture into quarter size balls, make sure they are smaller in diameter than that of your candy mold, and then lay them on a wax paper or parchment covered cookie sheet.
  4. Chill in the freezer for a few minutes, until they are slightly firm but not frozen.
  5. Melt chocolate bark and candy melts in microwave per directions on package.
  6. Using a spoon or squeeze bottle, fill each mold cavity with a small amount of chocolate. I used a squeeze bottle to do this step but you can also use a spoon. You will have to experiment on how much to put in. I was in a hurry doing mine so they did not turn out as great as I would have liked them to. I filled the cup about ½ full of melted chocolate. As soon as you fill the cavity, go ahead and place one of your rolled balls into it. Do it one at a time. Carefully push it down the ball until the force causes the chocolate to push up and fill in around the sides of the ball. Only push down once the chocolate reaches the top edge.
  7. Place the mold tray filled with cupcakes in the freezer for just a few minutes to let the chocolate set. Remove from the freezer and then gently push the bottom of each cup and pull up on the cake ball top to release from candy mold.
  8. Hold the bottom of the cupcake; dip the top in another color of melted chocolate.
  9. Decorate the ball as soon as you pulled it out of the colored melted chocolate.
  10. Last step…….(the best step) EAT THEM, they are YUMMY!!!!

Crawling

Brooke is now crawling!!! She started out scooting on her tummy and then went between a normal crawl and scooting to now a normal crawl. She is so cute and is just growing like a weed. She is into everything so now baby proofing the house has really begun.

Shakespeare


Last night Brandon, Brooke and I went to Shakespeare in the Park. This was such a fun event. The company Brandon works for sponsored this event and last night was the company night. It started at 8:15pm so the weather was a lot cooler and made for a very pleasant evening. We just grabbed some food on the way there and I wish I would have known what it was like because it was the perfect place for a picnic and we didn’t bring one, I was bummed. I love picnics and the fact that I missed out on one is sad. Brooke did great during the play. She played with her toys on the blanket and watched everyone around her. If you get a chance to go, this makes for a great date or family night. Although Brandon and I were confused with the old English language for a little while, lol.

Arboretum


Today Brooke and I invited Nana to go with us to the Arboretum since it was in the 80′s. Once we got there though it got a lot warmer, so we kinda rushed through it. I had the brilliant idea to wear jeans so this made it worse. Brooke liked looking at the flowers and I got some very cute pictures of her. I am loving the family pass that I bought in march. Free entry and parking whenever we want. It’s so nice!

End of the Race

Wow, Brooke is doing things right and left, it is so fun to watch. Today she said Dada and said it to Brandon. He was so excited. So this marks the end of the race for which name she says first in reference to us. Hopefully mama will come soon!! She also clapped her hands today. She loves us to sing patty cake to her and today she clapped her own hands several times. Again this was so cute!! We just love watching her grow and do these amazing things. How these simple things can be so exciting to parents!!! Yeah Brooke!!!
