BBQ Sloppy Joes

1 lb extra lean ground beef
1 bell pepper, chopped (I used red)
2 carrots, shredded
¼ onion chopped
½ cup BBQ sauce)
½ cup RF cheddar cheese
2-4 wheat hamburger buns

Directions:
1. Brown meat
2. Add peppers, carrots and onion, cook until these are soft.
3. Add BBQ sauce and simmer until thickened.
4. Stir in cheese before spooning onto the buns.
