Cool Peanut Butter Chocolate Cups
I am eating a certain amount of carbohydrates a day and lets face it, sweets have way too many carbs! Even though I am limiting myself to a certain number of carbs a day, I still want my sweet fix every once in awhile. If you look at labels, you will find that almost all “low fat” or “lite” items are higher in carbs than the normal stuff! So in this recipe use the good stuff! You will consume less carbs even though it’s very few per serving!
Ingredients:
One large container of ORIGINAL Cool whip
4 tablespoons of peanut butter ***again look at labels, all of them have different carb amounts, choose the one with the lowest amount of sugar and carbs
4 Tablespoons Walden Farms Chocolate syrup (this stuff has 0 carbs)
Directions:
Place 24 cupcake liners in a cupcake pan.
Defrost Cool Whip and place in a mixer.
Place peanut butter in with the cool whip and mix till blended
Using an large ice cream scoop, place 1 scoop of cool whip mixture in a cupcake liner
Place chocolate syrup in a small Ziploc baggie, cut the end off slightly and drizzle each cup with some chocolate
Place in freezer for 45 minutes, then you can place the cups in a Ziploc baggie but they wont last long, these little desserts are yummy!
With the cool whip, peanut butter and chocolate syrup I used each dessert is 4.2 net carbs! I hope you enjoy these and let me know how yours turn out!!!
