Chicken Vegetable Bake

This is a super easy dinner that just reminds you of a great home cooked meal. Meat, potatoes, carrots and bread, what else do you you need?

Cut up 4 small potatoes (I left the peel on , but this is up to you), and as many carrots as you would like. I used about a cup and a half. Place the chopped veggies in a sprayed baking dish.

Mix in a separate bowl: 1 cup chicken broth, 1 package of Onion Soup Mix, 2 tsp of olive oil, 2 tsp of garlic powder and some pepper.

Cut 1/2 – 1lb. chicken into cubes and place on top of the vegetables. Then pour liquid mixture over the chicken and vegetables. Cover with foil and bake at 350 degrees for 1 hour and then uncover and let bake for another 10-15 minutes.

This was delicious, and I served it with bread for us to soak up the juices! It was very tasty!
