Chicken Scampi Pasta
8 ounces uncooked spaghetti noodles
1 pound chicken breast strips
1-2 tsp Cajun seasoning or your choice (I used garlic powder, season salt and pepper)
1 tbsp olive oil
1 medium red bell pepper, thinly sliced
1 medium yellow bell pepper, thinly sliced
1 medium orange bell pepper, thinly sliced
1/2 red onion, sliced (optinoal)
3 cloves garlic, minced
1 cup fat free low sodium chicken broth
1/3 cup milk
1 tbsp flour
3 tbsp light cream cheese
fresh cracked pepper
salt to taste
Slice all your vegetables.
In a blender combine milk, flour and cream cheese. Set aside.
Season chicken generously with seasoning
Cook pasta as directed
Heat a large heavy nonstick skillet over medium-high heat, spray with cooking spray and saute 5 to 6 minutes or until done, set aside
Add bell peppers and onions to your skillet and saute for 3-4 minutes or until soft (add salt and pepper for taste)
Reduce heat to medium-low, add chicken broth and pour in flour mixture, stir for about 2 minutes
Add the chicken to the skillet, add some seasoning then cook for another minute or two until hot, then add the noodles, toss well to coat.
